Foodie Friday: Tomato Based Sauces
Tomato based sauces are so versatile and a great way to use tired vegetables. I also sneak things in that my kids think they don't like (Shhh). This cook up had 7 vegetables cooked slowly with free range chicken drumsticks. I'd serve this with either GF pasta, quinoa, or I pour it over more vege that my kids do like 😉. I try to make a double batches when I can and freeze a serve for a quick midweek meal. Tuck in!

Pumpkin soup
Our pumpkins are ready and Pumpkin soup seemed like the right recipe to start with. I added a few spoons of Massaman curry paste to pump up the spice, pepitas and sunflower seeds for texture, trace minerals and EFA's. I stirred through a spoon of coconut milk per bowl for creaminess. Add this version to your repertoire, it was delicious!
