This Quinoa Tabbouleh hit the spot. Combine parsley, mint, cucumber, tomato and cooked tricolour quinoa. Dress with good olive oil, lemon, S&P and spring onions (my little peeps don't do raw spring onion yet, but throw them in for some extra bite if they are to your taste!)
