Sweet potato 'toast'

#Foodiefriday Sweet potato 'toast'. Peel and cut sweet potato long ways (4-5mm thick). Toss in a little olive oil and bake for 15-20min in a 180 degree oven on a lined baking tray. Toppings tonight included: - spinach and egg - hommus, avocado and walnuts - zucchini, capsicum and tahini. Pick you favourite or design your own! The upside is the leftover sweet potato toast can be popped into the freezer (tip: leave them on the roasting tray until frozen before storing in containers or zip lock bags).These can pulled out for fast midweek dinners, a weekend brunch or added to a work lunch 😁 Thanks for the inspiration @djblatner 🙏😀🙌
